Caramelize 1 onion in margarine or your choice of oil. Add garlic, parseley, thyme, and sage with canned or fresh mushrooms to the mix and sautee until garlic is slightly brown. Add mock duck (or other protein source) and spinach to the pan and cook on low for 5 minutes. As a garnish, squeeze lemon juice and sprinkle with sesame seeds. Serve over white or brown rice. Nummy!
Rich Chocolate Mousse:
4 ripe avocados
1 cup cocoa powder
1 cup agave nectar (or simple syrup)
Place all ingredients in a blender or food processor and mix until smooth. I have also added vanilla for additional flavor. Tasty if served with fresh fruits. If you make this whole recipe, have friends to help you eat it!
Quinoa Pilaf:
Bring 2 cups quinoa in 4 cups of water or vegetable broth to a boil then reduce heat to low and simmer until all water is absorbed. Cool quinoa in refridgerator for a few hours before making the pilaf.
Sautee 1/4 cup pine nuts and 2 cloves of garlic in 1TBS butter or margarine. And set aside to cool. Dice 1 apple. Cut 4 swiss chard leaves into ribbons. Make 1/2-3/4 cup of minced fresh parsley.
Mix all ingredients in a large bowl. Salad can be tossed with lemon juice, olive oil and 1/4 cup currants. Swiss chard can be replaced with any heavy green vegetable, like kale, collard greens, mustard greens, spinach.
